Well, with December literally around the corner, we’re filling our kitchen and specials board with some of favourite seasonal winter ingredients. Every day, we put a selection of local produce on our menu and serve up a hearty, simple but delicious Locals Night menu each Thursday evening.
What’s in our kitchen this winter?
Wild Seabass – a true favourite of ours, and a sensational fish during the winter season and a regular feature on our menu, cooked simply with a lemon butter and roasted new potatoes.
Skate – a curious fish but absolutely delish. We love to grill our Skate wings with a caper butter – the perfect combination in our eyes, with a portion of hot, crispy fries. A champion combination.
Wild Mushrooms – we absolutely love creating a wild mushroom risotto, and frequently have a baked butternut squash stuffed with wild mushrooms on our Local’s Night menu.
Cauliflower – is there a more versatile vegetable? We’re not sure there is. Again, a staple in our homemade curries, we roast it, season it, and add extra punch to many a vegetarian dish with the good old ‘cauli.
Apples – it wouldn’t be winter at Billy’s without a regular helping of Crumble with local Caroline’s Dairy ice cream. We swear by the 8,4,2 method when making our crumble mix – 8 spoons of flour, 4 of butter, 2 of sugar. Works a treat every time and you can scale it up as needed.
